Pantry Pasta for Two and Fruit Pizza

After working late on Monday and having class last night, Seth was finally able to get home before dinner. So, I decided to whip up something delicious in the kitchen. And dessert.

I found one of my favorite blogs, The Pioneer Woman, at Christmas, when I was scouring the internet for a coffee cake recipe. In fact, I believe I performed a Google search for "best coffee cake," and I happened upon The Best Coffee Cake. Ever. And let me tell you... the only thing disappointing about that recipe is how quickly it disappears.

Since that wonderful discovery I have begun to use her blog as my own personal cookbook. Tonight, I made not one, but TWO of her recipes! And after a full month of successful dieting, we welcomed in February by stuffing ourselves. In fact, I'm writing this blog at midnight because I had to immediately put on sweats and watch an episode of Glee in a delightful food coma before propping myself up just enough to type this.

It took me a while to choose a recipe, as everything looked delicious. I finally settled on Pantry Pasta for Two because it is quick, easy (cooking does not come naturally to me), and a pasta dish (my favorite). I made a quick trip to pick up the ingredients from one of my favorite local grocery stores, Stump's Family Marketplace. It's a little pricey, but close to home and very welcoming.

Doesn't this look fabulous?

Red onions cooking in EVOO may be one of my favorite smells. Note: I did not use olives like the recipe calls for.
How did I not know this simple and yet incredible way to cook chicken before now?

Yeah, it's THAT good.

We were already full, but I wasn't done...

Sugar cookies?

Yes, please!

Whipped topping?

Oh, yes!

Fresh fruit?

Could this get any better?

Behold: Deep Dish Fruit Pizza.

Sugar Cookie 'Pizza Dough"
Cream Cheese and Marshmallow Fluff Topping
Dig in!
And what is a blog post without a picture of Harlow?
Did I mention she's REALLY into lounging lately?

    1. You really should try this pasta recipe! Seth is hard to please, mostly because he is a much better cook than I am, so the fact that he requested it AGAIN two days later is amazing!
